stir fried spinach with silver anchovies





This recipe is almost the same as the stir fried vegetables recipe. the only difference is the silver fish anchovy garnishing, which is optional but i like it, and will do it when i have the luxury of time =)






Ingredients
a bunch   fresh spinach (for 2 persons)
1 tbsp      chopped garlic
4 slices    old ginger
2 tbsp      oil
handful    silver anchovies
                filtered water
                salt & pepper to taste
                chinese rice wine for cooking (optional)


    fresh spinach
  • wash & drain silver fish & drain dry
  • wash, peel & drain vegetables
  • heat wok on medium heat, add oil when wok is hot then add anchovies
  • fry until golden, remove into small plate; leave aside for garnishing
  • add in ginger & garlic to remaining oil; fry till garlic turns golden
  • turn heat to high, add vegetables & stir fry
  • add about a tablespoon of water, cover with a lid for about a minute
  • lift lid, then add salt, pepper / seasoning to taste / rice wine
  • silver anchovies
  • garnish with anchovies before serving

Notes
the cooking time should take about 3 minutes, slightly more if in larger amounts
most restaurants add a dash of rice wine to the vegetable to add fragrance to the dish
once the vegetables are put in the wok, keep heat on high (even when you cover the lid). if you have removed the lid, do not cover it again, otherwise your greens will turn all dull and yellow
