deep fried prawns









i love deep fried anything. however, as i age - my ability to consume deep fried food has decreased. so sad... but i still love deep fried food nonetheless!!


Ingredients
8    prawns - shelled & deveined
      salt & pepper to taste
      cornflour for dusting prawns
      oil


> batter
1 tbsp  cornflour
2 tbsp  flour
1/4 tsp eno
  • clean and dry prawns. add salt & pepper
  • mix batter ingredients with some filtered water until it becomes a runny consistency
  • heat oil in wok on medium heat. 
  • dip cornflour dusted prawns into batter one at a time & drop into hot oil
  • when all prawns are in the oil, turn up the heat. cook for a few minutes or until prawns are cooked
  • remove prawns and drain excess oil
  • serve immediately


Notes
if you like the "straight" looking prawns like japanese tempura prawns, just give bottom side of the prawns a few cuts & you will see the prawns "straighten"
do not over cook prawns unless you like it tough
