abc soup

i never really found out why this is called abc soup. i think maybe because it's "as easy as a-b-c" to make? if anyone knows, please do share in comments =)


Ingredients
2         medium potato 
1         large carrot 
1         yellow onion
2         tomato (optional)
1 cup   soy beans (for vegetarian version)
1 pc     lean pork medallion - sliced in to large pieces
2 ltr     filtered water
           salt & pepper to taste


  • boil water in pot
  • wash & remove skins from potato & onions. 
  • half tomatoes & remove seeds.
  • cut the all vegetables into large pieces
  • add all ingredients to boiling water. close lid & boil for 10 - 20 minutes
  • then turn heat to minimum and boil for 3 - 4 hours. depending on the type of pot you use, you many need to add some water in between
  • add sea salt just before you serve the soup & turn up the heat for 5 minutes. do not stir soup vigorously after adding salt
  • makes about 4 - 5 bowls of soup ... enjoy =)


Notes
for a vegetarian version, omit pork & add in a cup of washed soy beans to add to the "sweetness" of the soup.
you may also use a slow cooker to boil the soup. you do not need to add any more water in between. just make sure you add boiling water to slow cooker before adding the ingredients. will need to boil for about 4 hours or more
