i recently met a lovely and very chirpy elderly lady who is passionate about food. she taught me to be more creative with "what ever" is available in the refrigerator. this is one of the dishes inspired by her. by the way, she runs citrus cafe and restaurant in bangsar village II
Ingredients
1 stalk leek (thinly sliced)
1 cup zucchini - yellow & green mix
1 tbsp dried shrimps
2 eggs
2 tbsp oil
salt & pepper to taste
- cut zucchini lengthwise into quarter then slice thinly
- wash dried shrimps and drain water
- heat pan, add 1 tbsp oil
- add leek & cook for about 2 minutes then add dried shrimps and fry for a minute
- add zucchini, stir fry for another 2 minutes then turn off heat & remove from frying pan to cool on a flat plate
- reheat frying pan on medium heat & add 1 tbsp oil
- whisk egg, salt & pepper till fluffy
- add cooled vegetables & mix
- pour mixture into frying pan, cover with lid & cook on medium heat for 2 minutes
- turn egg & cook for another minute or so
- remove unto plate and serve
Notes
for ovo-vegetarians, just remove the dried shrimps from the ingredients
