many do not like frying fish because the oil just "pops" everywhere; messy and can be painful. me, i don't care - fried fish with a good soy sauce is too yummy!
Ingredients
1 pc garoupa fish
salt & pepper
corn flour
japanese citrus soy sauce
oil
- clean & dry fish. season fish with salt & pepper
- when ready to cook, heat oil in pan on medium heat
- dust fish with cornflour well
- gently place fish into pan, turn the fish to cook both sides
- remove fish unto plate, add soy sauce & serve immediately
Notes
to reduce the oil "popping" when frying, drain the fish well of water. keeping it in the refrigerator on a strainer for an hour or so also helps
(a) pan frying, where u use just enough oil to cook the fish, i.e. 3 tbsp for a medium piece and more for a larger one
(b) deep frying, where the fish is completely immerse in oil. we call this style "yau chum" in cantonese, direct translation is "oil soaked" ... hahah, doesn't sound too healthy eh?
fish does not take long to cook. over cooked fish will turn the meat hard & dry. well cooked fish meat is flaky and moist. the dusting of cornflour also helps keep the moisture in & reduces "popping" too
