Ingredients
a bunch vegetables (for 2 persons)
1 tbsp chopped garlic
4 slices old ginger
1 tbsp oil
filtered water
salt & pepper to taste
seasoning (optional)
chinese rice wine for cooking
(optional)
- wash, peel & drain vegetables
- heat wok on medium heat, add oil when wok is hot
- add in ginger & garlic; fry till garlic turns golden
- turn heat to high, add vegetables & stir fry
- add about a tablespoon of water, cover with a lid for about a minute
- lift lid, then add salt, pepper / seasoning to taste / rice wine
- serve immediately
Notes
the cooking time should take about 3 minutes, slightly more if in larger amounts
most restaurants add a dash of rice wine to the vegetable to add fragrance to the dish
once the vegetables are put in the wok, keep heat on high (even when you cover the lid). if you have removed the lid, do not cover it again, otherwise your greens will turn all dull and yellow
