prawns with leek & tomato





i love anything with tomatoes. one day i had some leek that needed to be used up, with some fresh prawns & the ever handy tomato, and ta dahhhh .... it's now one of my favorite dishes. quick & so tasty!


Ingredients
8 pcs    salt water prawns 
1 cup   thinly sliced leek
2         very ripe roughly chopped tomatoes (large)
2 tbsp  chopped garlic
2 tbsp  tomato sauce (optional)
1 tbsp  chinese rice wine (optional)
           cili padi (optional)
           oil
           salt & pepper to taste

  • clean & de-vein prawns. i normally leave the shell & head but make sure you cut all the sharp areas off (i.e. parts above & at the tip of the head)
  • heat a tablespoon of oil in wok on medium heat, when oil is hot add garlic & cili padi & fry till it turns light golden brown
  • add leek & fry until soft
  • then add in chopped tomatoes & close lid for 3 minutes, add tomato sauce
  • turn heat to high, add prawns & turn with spatula
  • close lid for a minute or two, lift lid. when prawns are cooked, add salt, pepper & a dash of chinese rice wine. serve immediately

Notes
prawns cook very quickly. always cook them in high heat as low heat will increase cooking time & causes the meat to "soften"
for a bit more gravy, add some water
when i'm out of tomatoes, i just use tomato sauce - turns out just as yummy
