braised potatoes with soy sauce

i've mentioned my love for potatoes, and this is one of my many favorite potato dishes. takes a little more effort to prepare, but very fast to cook

Ingredients
2              potatoes
2 tbsp      chopped garlic
1-2 tbsp   premium soy sauce
1/2 cup    water
               pepper to taste
               chinese rice wine (optional)



>> deep frying

  • peel, wash & slice potatoes
  • heat oil in wok or pan for deep frying
  • when oil is hot add potatoes slice by slice
  • deep fry on medium heat until golden brown
  • just before removing potatoes, turn heat up
  • drain oil


>> cooking

  • heat wok or pan with just enough oil to fry garlic
  • when oil is hot, add garlic & fry till golden brown
  • add water & soy sauce one tablespoon at a time; taste & if needed add more
  • add fried potato slices, cover lid & simmer for a minute or two
  • a dash of chinese rice wine & pepper 


Notes
use a good soy sauce. all soy sauce vary in saltiness, so use less first then taste & add more if required
how much water to add depends on the potatoes you use, some absorb more and others less; so use less water first then if needed, add more
also, adjust the amount of water to add depending how much gravy you like
