seriously delicious & quite rich! this recipe is courtesy of my good friend's mother, mrs lian
ingredients
2 medium sized potatoes - boiled through, cut into large cubes & cooled
1 avocado - peeled & cut into large cubes (optional)
1/2 yellow onion - sliced very thin
3 free range chicken eggs - hard boiled, cut into large pieces & cooled
carrot - sliced into thin strips
cucumber - remove seeds & sliced very thin
mayonaise - i prefer the japanese ones
cracked peppercorn
- mix & mash potatoes with eggs. if you like the potatoes more mashed, then just mash it more. i like to bite into potato so i tend to just mash a little & mix the egg in well
- add pepper to taste
- add avocado, mayonaise & mix
- lastly add in the desired amount of cucumber, onions & carrot
- refrigerate, can keep for a day & serve cold
notes
i like to use japanese cucumber, seems more crunchy. have to also remove the seeds otherwise the mix will become watery after sometime. you can use celery instead of cucumber
how much mayonaise to use to up to you. more mayo = creamier. same with the egg. you can use less or more eggs, as you like it
the original recipe does not have avocado; generally - main ingredients are potatoes, eggs & mayo, everything else is extra!
