pumpkin rice

this is very easy dish to make but tastes wonderful, if you like pumpkin =)


Ingredients
1 cup       rice
3 cups     pumpkin
1 tbsp     dried shrimps
2 tbsp     finely chopped garlic
1             sliced lap cheong / 
               chinese sausage (optional)
1/2 cup   thinly sliced pork (optional)
               water / stock

  • wash & drain rice
  • marinade sliced pork with pepper, soy sauce, chinese rice wine, sesame oil & a little corn flour. leave in refrigerator
  • heat wok / pan with 2 tbsp of oil (less if you use non stick)
  • when oil is hot, add garlic & fry for a minute then add dried shrimps. fry until garlic turns golden brown
  • add in pumpkin, mix & cover lid for 2 minutes
  • add in rice; fry till rice is quite dry. add salt & pepper to taste
  • remove into pot, add water/stock & cook in rice cooker
  • when rice is almost cooked, spread pork slices & lap cheong over rice & cook



Notes
if you like cili padi, can serve rice with it
for a vegetarian version, just omit the meats / dried shrimps
goes well with lettuce, used as wraps for rice
do not use too much water / stock when cooking rice; add more if you need to later
